Abstract

|
Leuconostoc mesenteroides No. 20-2-10 isolated from Kimchi demonstrated to be a good strain for the production of glucose-6-phosphate dehydrogenase, an intracellular enzyme (average lu/ml broth). It was demonstrated that the maximum enzyme activity was obtained in the AC medium containing 1.2% sucrose as a carbon source and 1.0 % yeast extract and 1.0 % tryptone as nitrogen sources. The optimum temperature and pH for the culture of the organism were 30℃ and 7. 0, respectively. The maximum growth of the cell and the productivity of the enzyme was attained within 10 hours at the condition described above.
