Abstract
Leuconostoc mesenteroides No. 20-2-10 isolated from Kimchi demonstrated to be a good strain for the production of glucose-6-phosphate dehydrogenase, an intracellular enzyme (average lu/ml broth). It was demonstrated that the maximum enzyme activity was obtained in the AC medium containing 1.2% sucrose as a carbon source and 1.0 % yeast extract and 1.0 % tryptone as nitrogen sources. The optimum temperature and pH for the culture of the organism were 30¡É and 7. 0, respectively. The maximum growth of the cell and the productivity of the enzyme was attained within 10 hours at the condition described above.
